Bouteillan is an olive variety originating from the Provence region in France. It is an early-season (October-November) and cold-resistant variety suitable for mechanical harvesting. While it has high yields, its productivity is not continuous.
Oil content ranges from 15% to 25%, depending on the harvest time.
Olives should undergo cold pressing within 12 hours after harvest.
Low acidity.
Oil color: Golden yellow.
Taste: Fruit-flavored, reminiscent of pear.
Aroma: Plant-scented when harvested early, fruity when harvested late.
